Confetti Cookies



These cookies are so festive and are perfect for a kid's birthday party or any fun get together. I really like this recipe because it's so easy and can be done for occasion. Feel free to add any filling, food coloring or use any shape cookie cutter.

Confetti Cookies
Ingredients:

For the Cookies:
1 cup butter
1 cup sugar
1 1/2 teaspoon vanilla extract
1 egg
1 teaspoon water
3 cups flour
1 1/2 teaspoons baking soda
1/4 teaspoon salt
1/2 teaspoon food coloring (optional)

For the "Glue":
1 cup confectioners sugar 
2 tbs milk

any sprinkles or small candy

Directions:

1. Preheat oven to 350.
2. In a large bowl cream together the butter, sugar, vanilla extract, and food coloring (optional) until fluffy, 2 -3 minutes.
3. Beat in egg and water.
4. Add the flour, baking soda, and the salt. Mix together with hands until dough forms.
5. Chill dough for 30 minutes.
6. Cover surface and rolling pin with flour and roll out the dough to 1/2 inch thickness.
7. For each cookie, cut 2 regular shapes, the same size, and 1 with the same shape and size but with a with a small hole in the middle.
8. Carefully place on baking sheets lined with parchment paper.
9. Bake for 10 minutes or until edges are golden brown.
10. Let cookies cool for 10 minutes.
11. Make "glue" by mixing together the confectioners sugar and milk in a small bowl.

Assembly:

Put "glue" in a piping bag fitted with a small round tip. Take one whole cookie and pipe a small ring near the edge. Place a cookie with a hole in the middle on top. Fill the hole with whatever sprinkles or candy you want. Pipe a ring around the cookie and place a whole cookie on top. Let dry for 10 minutes.
